I make a salad dressing using 1 T dijon mustard, 1 pkt Splenda, 2 T flavored vinegar(fig is great, but raspberry is more common) & finally whisk in 1/4 cup olive oil until emulsified. A note on flavored vinegars: My fav is a coconut vinegar, but it contains sugar, so I made my own s/f version using unsweetened rice vinegar, a few drops of coconut extract & splenda pkts to taste. Just mix all ingre together in a jar, shake & store in fridge. This makes an awsome vinaigrette for salads.
