Glycerine (glycerol) is interesting stuff. It is not quite a fat (because it has no fatty acids) - and yet it is the backbone of EVERY fat (tri-GLYCERIDEs). It termed a carbohydrate by the government because it is neither a protein nor a fat.
The body doesn't quite know what to do with it. First, it is poorly absorbed - and yet, it can be excreted in urine. In the liver, it can be converted into glucose - and yet, it has a minimal inpact on blood glucose levels. It is produced in the body as a residue when all the ketone bodies have been burned off a fat.
So, it can be a sugar, and it can be fat, and it is not a sugar, and it is not a fat.
(Yes, the science of metabolism is maddening sometimes.)
In addition to glycerine's uses in food, it is great at getting out mustard stains on clothing, and it is a major component of Astroglide. http://www.astroglide.com/products_astroglide.asp
