on cooking for company...one of our mentors is a gourmet chef--Karen. The link at the top of the page you're looking at, in the orange bar, that says "low carb recipes" has some of her delightful offerings.
The great thing about cooking LC is any baked, broiled, or fried meat and steamed or roasted veggie will do for you....and cream sauces and cheese sauces made with cream are LC and seem like such a treat to your visitors. Salmon kabobs are fun and relatively easy. Offer a mixed green salad, too. Then you can also make up a side dish of a whole grain (try something slightly exotic like quinoa or millet or amaranth and cut up chives into it--they'll think they're eating really fancy food but it's easy as can be). You won't eat that, of course, but they can.
Nobody can tell the difference between an LC cheesecake with almond crust and a "real" one with graham cracker crust. Berries with splenda-sweetened whipped cream make a lovely dessert, too. Both of these you can eat! Otherwise, just buy a dessert for them made of something you hate.
