Default Past a test

Hey Everyone, Because of the support and encouragement of just reading your posts, I am standing firm in my eating Low carb. Last night I had my annual dinner for the girls in my aerobics class. For the last 10 years they have always wanted me to make Mexican food. I made their favorite....cheese enchaladas, (mine too), but my husband barbaqued 2 chickens for us....no sauce just marinated in lime juice and spices, and I had that available with a huge salad. The girls brought dips and chips, which I was able to ignore but the down side was that one of the girls brought her famous coconut cake.......I had a small piece.....did not finish it....I was able to stop. That is really a first. I did not eat any of the enchaladas just chicken on salad....drank water....I am down a pound this morning. I don't weigh every day so I will check this at the end of the week.
Am going to have to stay strong as I have company wall to wall all of April and part of May. Ideas from any of you about how to cook for company and stay out of the carbs will be appreciated.

I think you did just fine at your get together.I would make nice dinners for friends visiting and then modify it to fit my new way of eating.Good Luck

on cooking for company...one of our mentors is a gourmet chef--Karen. The link at the top of the page you're looking at, in the orange bar, that says "low carb recipes" has some of her delightful offerings.

The great thing about cooking LC is any baked, broiled, or fried meat and steamed or roasted veggie will do for you....and cream sauces and cheese sauces made with cream are LC and seem like such a treat to your visitors. Salmon kabobs are fun and relatively easy. Offer a mixed green salad, too. Then you can also make up a side dish of a whole grain (try something slightly exotic like quinoa or millet or amaranth and cut up chives into it--they'll think they're eating really fancy food but it's easy as can be). You won't eat that, of course, but they can.

Nobody can tell the difference between an LC cheesecake with almond crust and a "real" one with graham cracker crust. Berries with splenda-sweetened whipped cream make a lovely dessert, too. Both of these you can eat! Otherwise, just buy a dessert for them made of something you hate.

good going with passing up the carby food.
