Hi Karen,
I have tried many of your receipes and love all of them including the chocl. truffles. I am trying to find unsweetened chocolate in the brands you mentioned, callebaut, valrhona, scharffen berger and have not been successful in locating any of them. Have you tried "gourmet", natural or bulk food stores in your area? That's where I purchase the chocolate from in Vancouver.

I recently bought an 11 pound block of Callebaut unsweetened chocolate from www.chocolatesource.com for $44.50, and it has transformed my homemade chocolates!

Thank you for the information. I will check the store in Ashville, N.C. and another one right here in Charlotte. I quess I have another question I don't understand about chocolate. What is the difference in bitter sweet and unsweetened? It seems to me bitter sweet has quit a few carbs. Am I correct about that? Thanks again Judyt

Yes you are right. Bittersweet contains sugar. Unsweetened ofr bitter chocolate contains none.
