I have tried many of your receipes and love all of them including the chocl. truffles. I am trying to find unsweetened chocolate in the brands you mentioned, callebaut, valrhona, scharffen berger and have not been successful in locating any of them. Thank you for the information. I will check the store in Ashville, N.C. and another one right here in Charlotte. I quess I have another question I don't understand about chocolate. What is the difference in bitter sweet and unsweetened? It seems to me bitter sweet has quit a few carbs. Am I correct about that? Thanks again Judyt

Yes you are right. Bittersweet contains sugar. Unsweetened ofr bitter chocolate contains none.
