Default Homemade Protein Bar - Storage Questions

Hello! I've been very fortunate to find some homemade protein bar recipes on this site.

I've assembled the ingredients and plan to whip up a batch today.

I don't have the time to "cook" very often. I'm wondering if I can double the recipe and freeze? Do these freeze well? How long will these remain fresh in the refrigerator?

Thanks a bunch! barefoot1

Default My bars are cool!

Hi --

Without knowing the ingredients or the process you are using my answer to this cannot precisely address your case, but I can tell you what I do. My bars are cool -- cool because I store them in the refrige!

My homemade protein bars use peanut butter, butter, Splenda, and protein powder. I would not calssify the process of making them as "cooking" because no heat is involved, other than softening the wet ingredients. Basically I just comine everything, place in a glass pan and refrigerate. After a night or so of chilling I cut the fabrication into bars and store in plastic containers in the refrige. A batch usually produces two containers worth, with about a dozen bars each.

This will easily last the three weeks is takes me to eat them -- but then what in the ingredients is going to go bad?! I think peanut butter will survive the nuclear war -- just 12-foot cockroaches eating peanut butter!

Hope this helps -- Vimala

Thank you for your reply Vimala

Looks like I have your recipe and one other that contains similar ingredients, plus unsweetened chocolate, nuts and cream.

I am going to try freezing both kinds and we'll see what happens

I haven't tried one of the peanut butter ones yet - but somehow I am reminded of Mary Janes candy ( do they still make that candy anyhow? LOL)

Thanks again, barefootgrrrl

It would be great to have the recipe posted in the LC Kitchen Forum so all can enjoy it - unless it's already there.

sorry that it has taken me so long to respond to this msg - for some reason, I didn't get a flag in my email box like I usually do when someone responds........]

in any event - as I said, I found the homemade protein bar recipes on this site using the search function.

Thanks, barefoot

Default homemade protein bars

I just submitted a recipe in the small meals & snacks section of the recipe board called Peanut butter protein bars. These are the ones I make. The only problem I have with them is trying not to eat too many of them.
