Question Nitrate free bacon?

I see so many recipes calling for Nitrate-free bacon or sausage, but EVERY single package of bacon I look at in the grocery store contains nitrates.

Where in the WORLD can you find such products?

The only place I have been able to find it has been Trader Joes.

Thanks for the info. I'm moving to LAs Vegas soon and there are a couple Trader Joe's in that area.

Default Nitrate free bacon

There is a chain of stores in the USA called WILD OATS. I don't know if they have a web site, but they sell nitrate free bacon totally unsweetened and also nitrate free sausages and lunch meats.

Try doing an internet search for Wild Oats Natural Foods and see if there is one in your area or if they do any mail-order business.

I can testify that after eating many of their products, including the bacon and sausage, I continued to lose weight and also the foods did not cause any increase in my blood sugar whatsoever.

I am certain that these products will be a major staple in my diet.

In other words, whatever country you're in, it makes sense to hunt down a Health Food Store (and do some price comparisons) if you're looking for additive-free foods.

Also, I know Costco (the warehouser) sells nitrate-free sausages, but I'll have to check on bacon when I get back over there (it's a little far from my casa).

I shop at Whole Foods, they carry a bunch of nitrate free pork products in addition to a killer array of fresh meats and seafood.

OK, maybe I'm in the minority on this one, but the one time I splurged on the nitrate-free bacon (Niman Ranch brand, one I've had great results with in the past), and I didn't like it at all! It didn't cook evenly, and had an off taste to me. I haven't been back to it.

Default Why does it have to be nitrate free??

Afternoon,

Maybe I'm missing something but what is it about the nitrates that have us all running around trying to find nitrate free bacon/sausages? What impact do nitrates have on the LC lifestlye?

If anyone knows please pass it along, that will save me researching time on the internet.

Doesn't Atkins have somewhere in his books/plans something about an overdependent or overuse of processed meats?

Nitrates and Nitrites are additives used in processed meats.

I figure if it doesn't impact/increase the net carbs that I have to count then I'm going to eat bacon with nitrates and enjoy it!

Default why no nitrates

Nitrates can form nitrosamines, which have been proven to cause cancer in lab animals. That is, nitrosamines and cancer have a direct correlation, but nitrates don't always form nitrosamines and even when they do it's not in large amounts, not the large amounts that cause cancer in animals. So basically people avoid nitrates because they are leery of anything that is associated with anything that is associated with cancer. Studies that have tried to establish nitrates as a cancer-causing agent have been unsuccessful thus far; in other words, no study of people eating nitrates has shown an increase in cancer. By the way, I didn't find any nitrate-free bacon at Costco, just sausages. Publix (grocery store) carries nitrate-free bacon if you want to pay a lot. I try to buy nitrate-free bacon when I can, but I have to agree that I don't like the taste of it as much as nitrate-treated bacon.
