Default Resistant Cornstarch

Karen...I have just bought resistant cornstarch and the nutritional information says that 1 tablespoon is Net Carbs 3 grams. Can you give me any information on this product...do you use it like ordinary cornstarch? I would only use this sparingly, but it might be nice to have on occasion instead of using other low carb thickeners. I have an autographed copy of your recipe book that my daughter bought for me when you were in Toronto and I love it!

I can tell you it doesn't work like regular corn starch at all. It's more of a partial replacement for flour. I think the advice I saw was to substitute it for 1/4 of the flour you're using.

I guess that it may not be what I expected...I don't use any flour in my cooking. Thanks for responding.
