I've been all over the forum looking for a LC Zucchini Muffins recipe-------- or bread recipe (I'll just put it in muffin tins) I've seen alot of talk about it here somewhere but can't find a recipe.
Would like to know the carb count to, please.
Anybody???

Also, I stumbled on the mock danish recipe while looking---

It's actually a loaf recipe but my experience is those usually translate nicely to muffins with only a minor adjustment in timing (lose 5 minutes maybe from the baking time). I haven't actually had a chance to try it myself yet... so let us know how it goes (and do you have some experience in LC baking? it's a bit different and can take a little practice sometimes).
