Smothered Chicken
This is very quick and easy to prepare...throw in a low carb side dish and your set for the evening!
You will need:
4 Boneless, skinnless chicken breasts
1 packet of Onion sauce/gravy packet (found in the seasoning envelope section of your grocery)
1 package of baby portabella mushrooms
small amount of butter
Provolone Cheese
Oregeno, Parsley & Thyme
I salt and pepper my chicken breasts, and grill them outdoors (no matter the weather) You can bake them in the oven or cook them stovetop, however you prefer you chicken done
In a small pan, i use the butter to slowly sautee the mushrooms while preparing the gravy ( according to package directions) , Once gravy is done, stir in sauteed mushrooms..I add a bit of thyme & oregeno to the gravy
Top the chicken w/provolone and allow to melt......spoon gravy over chicken breast, add a few dashes of parsley, and viola!
Gravy has about 3 carbs/serving, plus the amount from the mushrooms...VERY yummy!
