Cool Cauliflower Potato recipe good for induction?

I have made this several times, also made the "pizza quiche" both recipies are excellent... but i'm wondering if they are allowed on induction.

I think as long as you stay within the cream and cheese boundaries for induction they would be fine.

On the quiche, I use plain canned tomatoes (1/2 can) and then blend and use my own seasonings. I check the can to make sure they don't add anything else to the tomatoes (sometimes it has sugar in it).

Have you tried the scalloped cauliflower? It is also very good, has cheese and cream in, but for a serving I think it would be okay also.

I also use the canned tomatoes and season with a bit of garlic and a lot of basil, and a spoonful of ex. virgin olive oil. Ilove it this way, tastes better than store bought sauce.
And yes I have done the scalloped cauliflower, my whole family loves this.
