hi there,
I'm not sure if hot water will deactivate the amino acid, but it seems unlikley .. I know that protein isolate powders are used in baking with no deterioration of their amino acids.
One thing .. you mentioned your glutamine has an "off" taste. It should be completely tasteless. Moisture will cause glutamine to decompose into an ammonia-like compound .. make sure you keep the container tightly capped and make sure the spoon is dry when you measure it out. Store in a cool, dry place.
