Question Vital Wheat Gluten Flour

Helloo everyone, Happy Thanksgiving to My Neighbours to the South! I posted this in The Canada Forum also....
I am trying to make my own LC bread and am looking for Vital Wheat Gluten Flour. The recipe I am using recommends Bob's Red Mill Flour but can't find that here in Canada. My local health food store has "Gluten Flour" but could not tell me the nutrient content. Can anyone tell me if this would be what I want...everything I read says if it is called gluten flour then it should be high in protein but I sure don't want to go to all the bother of making what I think is a LC bread and end up with some real high carb loaf!!!
Also there is something here called "Vital Gluten" that you can add to your bread to enhance its rising properties but it is not called flour..this is VERY confusing!!

I think the second one, Vital Gluten, is what you are after. Around here it's also called Vital Wheat Gluten.

If there's a Herbie's Drug Store near you, you should be able to get Bob's Red Mill products there. Some Zehr's and most Bulk Barns have vital wheat gluten, too.

Thanks....I know there are herbies in Cambridge and london and hour 1/2 drive for me but I do go there for Xmas shopping...thanks for info....

Herbies didn't have it but a place in Toronto called Whole Foods on Avenue Rd did and they shipped it to me!!

MaggieB - if you are near a Zehr's they have it in the special foods area with the health foods etc. The one in Woodstock and Stratford do for sure, if you are anywhere near there. I think it's about 10.00 a bag. I have been buying gluten flour from Country Bulk in Stratford and Sobey's in Woodstock also has it in the bulk food section.

I use gluten flour in my recipes that call for Vital wheat gluten flour and it seems to work just fine. I get mine from a food coop that some friends and I have together.

Thanks! I live an hour away from Stratford! I called the Country Bulk store there 'cause i thought for sure they would have it and they told me no ...must have talked to the wrong person.....oh well..I have 4 bags of the Bob's red mill on its way from TO now.....thanks for the info...I will keep it on file for future reference...'Maggie

i was just reading an article today about gluten flour... they said that gluten flour, instant gluten flour, pure gluten flour, and vital wheat gluten are all the same thing..different companies call it different things..they said it has about 24 carbs per cup... i found some stores near me in NY that have it but bobs red mill farms website also sells it.. here is the website below
