Default Chicken Kiev

This is my LC version of this classic dish.

Serves 2

2 chicken breasts
1 clove garlic
About 30g/1 oz butter
A little chopped parsley
1 egg
1 Aussie packet pork crackles/rinds - 25g/1oz, crumbled
About 30g/1oz parmesan cheese

Soften butter, and add chopped garlic and parsley. Wrap in plastic wrap and place in freezer or fridge until hard.
Flatten chicken. Place knob of garlic butter in centre of each chicken fillet, then fold together (or roll up, depending on how thin your chicken is ). Secure with tooth picks. Leave in the fridge to set for at least 30 minutes.
Dip first into beaten egg, then the combined pork crackles and parmesan.
Bake in 200ºC (about 380ºF) oven for 30 minutes.
