I have been unable to find nitrite free bacon in my area....Can someone tell me the brands they are using?...All the ones I have found are not nitrate free....

Julie, I haven't looked for it myself. You might want to check out the Canada board. It has some tips for where to purchase certain items.

Canada safeway here sells Hertels, not nitrite, low sodium bacon, it's the Best! it's a Vancouver Island company, they also make sausages too with no additives.
If you don't see it at safeway, ask them to get it in.

The only place I can get it is at certain helth food store, or, go to a good butcher shop that have their own smokehouse,, they smoke their meat without sugar, there a good one here in scarborough ont.
