Default Tuna Cakes w/ low carb tartar sauce

Tuna Cakes
2 cans tuna in water (well drained)
2 eggs
Juice from half a lemon
2 Tbls. mayonaise
2 Tbls. whipping cream
1/2 tsp garlic powder
1 tsp. onion flakes
Ground up pork rinds

Mix above ingredients well except add the pork rind "meal" at the end and mix til the mixture holds together and can be formed into a patty. Fry the cakes in some bacon drippings til browned adequately on both sides and are no longer mushy to touch.

Serve with Tartar Sauce

2 Tbls. mayonaise
1 tbls. sour cream
1 tsp. yellow mustard
1 tbls. dill relish
1 splash of tabasco sauce
1/3 a packet of Splenda (to taste )
Mix well and spread over tuna cakes . This is yummy. My husband told me to share the recipe with this forum.

This looks excellent, I've been making a similar, though simpler dish: just Tuna, eggs, minced celery and scallions. You mix one egg per can of tuna that you use, and use the same volume of minced celery as you do tuna... eat with mayo mixed with dill.

Mine's the lazy version!

THE TATER SAUSE LOOKS GOOD,I WOULD LIKE TO TRY IT.DO YOU KNOW WHAT THE CARB COUNT MIGHT BE AND ALSO HOW LONG WOULD THE TATER SAUSE STAY GOOD IN THE FRIDGE.
