Default Which cheesecake is thickest?

Hi all.

I've used the search function, and seen many wonderful looking cheesecake recipes. (OK, I'm about to sound kinda strange)... While I LOVE cheesecake, I don't care too much for cream cheese, (without an everything bagel surrounding it). I DO really like the firm cheesecakes though.

Question:
Of the different LC cheesecakes you've seen here, which is the most firm? (As opposed to the onese that are more creamy or like mousse).

Do you mean thick and dense like a New York Style cheesecake?

I think the recipe I have for the NY style cheesecake may be what you're looking for. It's at the top of the page under Low-Carb Pecipes.

Yes! I do mean a New York Cheesecake. And thankyou; I have printed out that recipe. It seems like I remember though, when it was on a thread, a few people saying it was more creamy. But hey, if it has a texture anything like a New York Cheesecake, I'm in!!!

As a total cooking novice, I do have a couple of other questons. Can I make that without the crust? And where you do guys get your almond flour and other interesting non-grocery store ingredients? I don't remember seeing almond flour at my health food store.

And lastly, how do you grind nuts to make them into a crust anyway? The only thing that comes to my mind, (DON'T LAUGH) is a morter and pestal, but that doesn't seem logical. Please enlighten me!

OK, I realize I just looked very stupid. Since being on Atkins I've started to cook literally for the first time in my life. It dawned on my that one would use a Cuisenart to grind up the nuts, right?

I sure don't own one of those yet.

It would be great if I could purchase almond flour or ground almonds somewhere. Any leads?

thanks very much for your help and understanding. Previous to the last couple of years, I always worked 2 jobs, and just literally never cooked anything more than speghetti.

Yes, of course you can make it without the crust! When people refer to almond flour, they mean finely ground almonds. You can get them in bulk stores and natural foods stores.

And you don't have to use brazil nuts. Walnuts, pecans and almonds work very well. Macadamias too.

No, you don't look stupid at all, you look brave! I always admire people who start learning to cook as part of their LC experience.

This wouldn't work that well for Brazil nuts becuase they're quite hard. To chop nuts without an appliance, put them in a sturdy ziploc bag and place the bag inside a folded towel. Whack away at them with a heavy object lake a rolling pin until they're crushed. I do this when I'm not using a Cuisnart for anything else in a recipe and can't be bothered taking it out of the cupboard. Do this on a really solid surface. If you can do it on concrete basement floor, so much the better.

There are also old-fashioned nut choppers made from a glass jar with a chopping blade through the lid that screws onto the top. You sproing it up and down to chop the nuts. It works quite well!
