To bean...or not to bean
One thing I miss a lot is chili--most of you would probably call it "chili soup", the way I was raised making it. I come from a family of 7, so my mom had to make her food dollar really stretch, so her chili was made with ground beef, onions, peppers, tomato JUICE, kidney beans, and a little spaghetti (YES, I said spaghetti!). So it was thinner, but it's chili to me and I miss it.
I recently found a bag of dried small red beans, Western Family brand, and the carb count is 23g, and the dietary fiber is 16g per serving (serving size is 1/4 cup dry), for a net total of 7 carbs. Could this be right? I could easily use 1/2 cup in my chili, along with the other ingredients, and still have a LC chili for all three of us Atkins followers in the house. I would leave the pasta out of the LC version.
What do you think? to bean.... or not to bean.......?
