Question To bean...or not to bean

One thing I miss a lot is chili--most of you would probably call it "chili soup", the way I was raised making it. I come from a family of 7, so my mom had to make her food dollar really stretch, so her chili was made with ground beef, onions, peppers, tomato JUICE, kidney beans, and a little spaghetti (YES, I said spaghetti!). So it was thinner, but it's chili to me and I miss it.

I recently found a bag of dried small red beans, Western Family brand, and the carb count is 23g, and the dietary fiber is 16g per serving (serving size is 1/4 cup dry), for a net total of 7 carbs. Could this be right? I could easily use 1/2 cup in my chili, along with the other ingredients, and still have a LC chili for all three of us Atkins followers in the house. I would leave the pasta out of the LC version.

What do you think? to bean.... or not to bean.......?

Try running the nutrition panel through our Hidden Carbs Inspector under Low-Carb Tools at the top of the page. The carbs may have already been pre-subtracted from the carbohydrate total and the count may be higher.

You can try soybeans in your chili as a low-carb choice. One cup of cooked soybeans has 17.06 grams carbohydrate and 10.32 grams fiber.

I did what you suggested. I was a little confused by the check box by where you entered Subtracted Fiber, so I did it once with the box checked and once without. Here are the results:
WITH the box checked: Actual Carbs -8.10

WITHOUT the box checked: Actual Carbs 7.90

Are the correct results the ones WITHOUT the box checked? Sorry, this just confused me.

That's the right one.

You only check the box if the manufacturer has stated on the label that the fiber has been pre-subtracted.

Karen! Thanks very much to my Northern Neighbor! I have been to Stanley Park on several occasions (I live in Everett, WA) --once at Christmas, and it was snowing those huge, fat, fluffy flakes--oh my gosh, one of the most beautiful sights ever!

Again, thanks for your input, now I think we can make chili our "treat" meal this month, altho I think I can make a small pot and not go over our carb allowance by much!

LoveSong,

I like beans in my Chili too. So I found that the cans of Black Soy beans have only 1 effective carb. I made my Chili with them. They are not starchy like other beans but after letting the CHili rest in the fridge overnight it was great the next day!

Be careful! those black soybeans have the fiber already subtracted. Not really 1 net..it is like 7 net.
