Talking Yummmmm.... Cookies!

This recipe is so yummy, I had to share it with EVERYONE!

EASY PEANUT BUTTER COOKIES
1 cup peanut butter (all natural, sugar free)
1 cup Splenda
1 egg
1/2 teaspoon vanilla extract


Blend all ingredients well. Drop onto a greased cookie sheet by the tablespoon(makes 20ish). Press them down with a fork or bottom of a glass to flatten because they will not spread. Bake at 350 for 10-12 minutes or until golden brown on top. Watch them closely because the bottoms tend to brown before the tops. They are very easy and have a delicious shortbread texture.

Approx. 3 carbs per cookie

Im still on induction ( at this rate I will be for life)... and this sounds great. Maybe when I get off of it someday I'll try.

Sounds great! Are you sure there is no baking soda or some type of flour mixture (atkins bake, pecan flour) needed? If not, that would be great, quick and easy.

I have tried this recipe and they do turn out just like snookums said. I found them too dry, however, and they just crumbled right apart. Not very appetizing.

How do you get 3 carbs per cookie? It looks more like 1.5 when I calculate it, may be it's the PB.

EDIT: Nevermind, I forgot to count the splenda!!! But even with that I still only get 2 per cookie?

I had the same trouble Hilary had. Not so great. Maybe I did something wrong but I did what the recipe asked. Better luck next time.

mom2e&r, there is no baking soda or anything in these. As for the trouble with them being too dry... yes, they did crumble a little more, but I just put mine in the fridge and that made them even better. Yes, they can get a little dry, I just make sure to eat mine slowly and have water on hand.

When I made these, I cut back on the Splenda quite a bit (I get a nasty aftertaste on the Splenda) and added softened butter. That helped with the dryness. I also read that someone suggested adding cream cheese to help with the dryness.

I bit of Erythritol in place of the splenda does wonders for this recipe. I have also added a bit of Carbolose which helps it stay together better.
