I'd probably adjust your menu like this:
B: add 2 slices bacon and 2-3 eggs
Sn: increase to 2-3 oz cheese. Or take those ham slices, smear them with cream cheese, & roll them up.
L: add a salad (spinach is great) with oil and vinegar dressing (make your own or check labels for no added sugar dressing)
S: add butter to the veggies.
You can also toss an ounce of heavy cream into your diet pepsi.
That'd do it, I think (without running the numbers through fitday, I can't swear to it, but the calories look better)
If you keep your calories under 1000 for several days, you risk triggering the "starvation" or "thrifty gene" responses where your metabolism lowers to meet your intake.
