Default daikon is awesome,but....

I read somewhere on here about using daikon as you would potatos so I bought one this weekend and absolutely loved it!!! My problem is how to count it...

I have the tag off of it right here:

serving size 3 oz.
Calories 15
Fat. cAl 0
Total Fat 0
Sodium 18mg
Total cArb 4g
Fiber 8G

Protein 1g

And...my problem is counting hte carbs...Since you can deduct the amount of fiber from the carbs...does that counsel out the carbs all together???? I tried putting it in fitda but it won't let me...says the carbs have to be higher than the fiber?

I would appreciate any help on this...as this is probably gong to be a new staple in my diet....because they are awesome!!!!

Yesterday, I chopped some up small..saauted in better with just a pinch of onion...till tender ..then scrmabled two eggs inwith it...they were great!! Even fooled my dh!! Thought they were taters!!!!

I am interested to see if anyone can answer that question! I, unfortunately can't. I don't even know what Daikon is, but would like to know. Did you find it in the produce section? Can you tell me what it looks like?

Yes..I sure can!

I found it in the produce sectin byy the radishes, mushrooms, etc. It is white..and large..thicker than a carrot..much thicker. I'm confused as to if it is a root, radish...or turnip???

Daikon rocks, doesn't it!

It looks like the fiber has been presubtracted from the carbohydrates.

This trend towards subtracting fiber from the total carb count and not stating it on the label is very worrisome because it leads some people to think that certain foods have a negative carb value. There is no such thing!

These are the nutrition facts from the USDA Database which is under Low Carb Tools at the top of the page.

For 100 grams, roughly 3 1/2 oz.:
Total Carbohydrates 4.11 g
Dietary Fiber 1.60 g
Total Protein 0.60 g
Total Calories 18.00
Total Fat 0.10 g

So, the carb count minus fiber is 2.51 grams.

There is a thread about daikon here that includes a picture of it.

I love Daikon. It's a radish much used in Japanese cuisine.

Thanks a bunch! That helps out alot! It does get confusing huh? How would I know (dumb me) that the fiber was already subtracted??? I bet that would mess up alot of people!

So, how much exactly is 1 1/2 ounces???? 1/2 a cup??? 1 cup???? What's your guess???

I have a cheepo little kitchen scale that I can weigh out ounces of food.

Daikon is a white radish I believe. It might be found in the produce section of a grocery store.

Volume Measures

1 tablespoon = 3 teaspoons
1 fluid ounce = 2 tablespoons
1 cup = 8 fluid ounces
1 pint = 2 cups
1 quart = 2 pints
1 gallon = 4 quarts

Weight Measures

1 gram = 1,000 milligrams
1 kilogram = 1,000 grams
1 ounce = 29 grams
1 pound = 16 ounces

Converting weight to volume and vice-versa can be hairy. There are generally about 4 oz. in a cup of cheese or flour. So, I generally estimate 1 cup of solid material as 4 ounces.

Beth is right, daikon is a white radish. It is used a lot in asian cooking, especially japanese and chinese. It is also really really really good! Although it is a type of radish, it is much sweeter and milder than a regular radish. In fact, it always taste to me like a cross between a radish and carrot. It can really go well ina lot of dishes and is nice just served raw on its own too. Yum!

I love to julienne daikon and fry them with my eggs for breakfast.

I want to try making "potato" chips from them, but havent gotten around to it yet. I just bet they'd be great with a little vinegar an sea salt on them.

BTW, I don't know how big your daikon is, but sometimes they look like baseball bats. I just wonder how they ever dig those big things out of the ground!
