Default New breakfast (to me anyway!)

This is sooo good & easy!
8 large eggs, whisk a little & add1/2 cup cream, set this aside.
Brown up 1# Jimmy Dean pork sausage, (I used sage) set this aside, clean & slice a container of fresh mushrooms, saute with 4 thin sliced green onions, 4 cloves of garlic, a small jar of diced pimento, salt & pepper to taste.
Spray a cake pan with Pam, pour in a thin layer of the egg mixture, spread out the sausage on top,then the sauteed vegetables, sprinkle on 2 cups of shredded Colby/Jack cheese, pour on the rest of the egg mixture. Bake ~ 350 for about 35 minutes. I ran the ingredients by FitDay, divided by 8 GENEROUS servings & came up with 3 5/8 carbs per serving (after I deducted the fiber) When it is cooled I will package it up, really an easy quick breakfast to nuke! Hope you like it as much as I do

This sounds really good & seems like it will last for a few days--just what I need. I am going to make it this weekend when I have some extra time.

This recipe is very good. I can't get Jimmy Dean sausage in Canada, so I used my own sausage patty recipe (I will post). I only made half of the recipe and made it in a loaf pan.

Very tasty. It wasn't as eggy as I expected. Great for Breakast, Lunch or Dinner.

Does anyone know if it freezes well? That would be the best.
