Default Going to a potluck - help!

Can anyone suggest something I could bring to a potluck dinner this Saturday? Most of the people who participate are gourmet cooks and about half of them are vegetarians (can you say, "lots of carbs"?) I used to make rice or noodle dishes, but that won't work well for me anymore and I want to make sure I have something good to fill me up when I'm there. The only thing I can think of to make is a Greek salad with romaine, olives, feta and tomatoes, olive oil and lemon juice, but I think I brought that last time and Im looking for something different. (Meat dishes don't usually go over well at these potlucks).

Help? Please??

Look in the Main dishes forum...I absolutely LOVE the Twice Baked "Faux"tatoes!!! Perfect casserole for a potluck!

How about a big platter full of grilled vegetables? Red, yellow, green peppers, eggplants, onions, mushrooms, anything else you can think of brushed with olive oil and a bit of vinegar. Or....creamed spinach? Eggplant parmesan? Stuffed tomatoes (I stuff them with egg salad or tuna salad)?

I'm sure other people can offer you more ideas too. This forum is so great! Good luck!

Default Stuffed Mushrooms

Everyone loves stuffed mushrooms and I think they are easy to make.

My recipe is quick and easy, nothing fancy, but at my parties, the plate comes back emtpy as soon as I set it out.

Cream cheese soften
Parmasian cheese
garlic powder
Sometime a add a bit oc canjun spice.

mix it up, and stuff into mushrooms (de-stemmed) bake at 425 for 18 minutes. Use a glass dish not a cookie sheet, mushrooms leak water when baked.

for parties and get together at the house, I make trays of them ahead of time, and pop them in the oven when we want some. Baking time then is a little bit more because they are chilled.

Not sure on the exact carb count, but it can't be too high.

I'd bring Deep Dish Pizza Quiche. It rocks. Plus, you can make a vergetarian version if need be. You can't go wrong with this dish.

I'm tasked with a "salad or vegetable" dish for a potluck tomorrow night. Here's what I'm bringing:

Sour Cucumbers

Recipe By :Scott Hysmith
Serving Size : 16 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
3 each cucumber -- peeled and sliced
1/2 each sweet onion -- peeled and sliced
1/2 cup kosher salt
1/2 cup black pepper
1 1/2 cups cider vinegar

Peel cucumbers and onion and slice to approximately 1/2" thickness.

Add salt and pepper to vegetables and toss to evenly coat.

Place in covered glass bowl overnight.

Next morning, drain and rinse slices and add cider vinegar, enough to cover vegetables

Let sit for 12-24 hours before serving

Don't forget deviled eggs...mayo, horseradish, tiny bits of minced green pepper...whatever...and top in off with a slice of pimento stuffed green onions? I think that fits into any phase of Atkins. Just relax and have a great time!
Or maybe a cheese tray? This is making me hungry!

We're going to a potluck Monday night and I'm bringing the Mixed Greens with Spicey Nuts and Brie Crouton salad from the Atkins website. Just look under the recipe part of that site under vegetables or salads. It's absolutely delicious with those crunchy sweet nuts!!!

Oh my gosh! Who would have realized there were so many wonderful choices! Hmmm.... which one to choose now? I'd better do a couple test runs in my kitchen before Saturday night now!

Default Take Care of Yourself!

Hey, you're going to this dinner too. And you're a person. Take a chicken. It's not red meat and some vegetarians [aka idiots] actually eat it. Roast a nice chicken with herbs, like "herbes de provence" or even just rosemary. Brush olive oil on it before you cook it. Insert the herbs up under the skin all over it. The aroma will drive them wild, and you can have something nice to eat.

I agree with Teuthis. So what if most are vegitarians. This is your party as well as theirs.

If you don't want to offend, you could bring a seafood salad or a seafood dip. I know many vegitarians who will eat seafood from time to time.

The roast asparagus spears are fantastic! Would make a great potluck contribution, if you can afford enough for everyone to share.

Seems to me when a person brings meat when people are vegatarians, they get offended. But does a meat eating person get offened when a vegatarian brings a pasta/veggie dish???

Maybe we should me more offened by such dishes..hehe.

Oh the nerve of some people ...bringing pasta rice dishes...don't they know they are loaded with carbs????
