Do you know of a way to get them crispy? I sliced some up really thin, like I do the fam's potatoes with high hopes of some crispy fauxtatoes. The taste was really good, but they were still really soft even when they were browned up.

They don't have the starch... so they won't have as much crisping potential.

I treat them like eggplant; after they are sliced or diced, I sprinkle with salt, let them sit, and then squish them good. It helps.

I cooked mine quite awhile with butter too until they were really nice and dark dark brown..they were just a little crispy but definitely were better the longer I let them cook/brown up..They didn't taste like actual potatoes but they didn't have a lot of cauliflower taste either...think the bacon, onion, butter, and different spices helped with that..

Plus I squirted a little LC ketchup on them & a bite of that along with my eggs and I really didn't get a cauliflower taste to them...the ketchup took it over the top for me because that's how I like my fried potatoes.

I will say the crispness they had the morning I made them did not last the next day when I reheated the leftovers..but they were still good.

Sometimes I think people make a mistake calling mashed cauliflowers 'fauxtatoes' as it gives the expectation that it will taste like mashed potatoes.

Cauliflower will never taste like potato as they are different kinds of plants.

But side dishes made with cauliflower instead of potato can be just as tasty and satisfy just the same, which makes them a good alternative for a lowcarber.

So call the dishes "mashed cauliflower" or "creamed cauliflower" or "cauliflower patties" and enjoy the taste in their own right rather than trying to simulate the taste of potatoes!

Yeah that was the key for me too..The longer I cooked the crispier and better they got.

I made them last night after reading the recipe here yesterday, they are great. my family also loved them.
