I started out taking psyllium husks, but there are so many more appetizing ways to reach the same end, so to speak. Many of them are mentioned above. My personal favorite is Flax-O-Meal cereal, which to me is a lot more comforting than a glass of psyllium--gulp!
I hope that with all the meat (esp. red meat) on this WOE maybe you will have less problem with anemia. Keep us posted. As you are probably aware, your pharmacist can direct you to iron supplements that are less constipating (but more expensive).
