I find celery to be a perfect on the go... with cream cheese or peanut butter.
BBQ pork rinds
any dipping veggies w/ dressing
pepperoni with melted mozzerella
packaged cheese cubes
and of course... way too many nuts!

When I was down in Branson over the holidays, I went to a place called Mountain Man Fruit & Nut Company. They had a sunflower seed butter that is lower carb than peanut butter (if I read it correctly). My newest favorite snack is celery with a very small amount of sunflower seed butter on it.

I also like bacon, cooked and either plain or wrapped in nori, olives, low-carb cheesecake - sometimes with strawberries in whipped cream and sometimes with a bit of blueberry-flavored DaVinci syrup. We like Slim Jims. We also make a cream cheese & salmon dip that gets eaten with pork rinds. Nuts, on occasion.

If you stir up some walnuts in egg white and add splenda and cinnamon and bake till crisp, they are really good! I did some batches for the holidays.

freydis, can u use pecans instead of walnuts?
I've made those before, but used regular sugar....now I will try splenda. I bought a box of pkgs of splenda. Used them in my tea.....I liked it. I will definitely try the nuts...I love that recipe and I am a cinnamon freak!

Question

Probably a stupid question, but when cooking bacon in the microwave how long do you usually put it in for? I've never done it this way but the biggest reason I don't have it often is because of the mess it makes on the stove!

Default microwaved bacon

It differs for me. At home I place 3 slices of bacon between two paper towels and nuke them for 4 minutes and they're nice and crisp! At work it takes only 3 minutes (4 minutes made my bacon so hard I couldn't part it from the paper towels.. what a mess!) Best thing I can suggest is to experiment. Start with 3 minutes and then check it every 20 seconds until it's done... then keep a mental note for next time. Enjoy!

Absolutely! Almonds, macadamias - pretty much any nut you'd enjoy plain would also be good this way. Even the high-carb kids like them, which make them a nice snack for company.
