Default Anyone have a casserole recipe for left over chicken and broccoli?

I have some left over roasted chicken and some fresh broccoli. I was hoping to make some kind of cheesy casserole. Does anyone have a recipe? No Shiritaki noodles please! Yuck!

Just start throwing stuff together and then bake it. That's how most of my recipes start out, just grab whatever I have that might be good with the rest of the stuff I have. Add spices that should be good with it. Pretty much always turns out tasty, but it's not an exact science.

I don't have exactly what you're looking for, but you could use either of these as a guide. You'd have to refigure the carb counts, though:

Dottie's Ham with Broccoli and Cauliflower

2 cups diced ham [sub chicken for the ham]
1/2 lb frozen cauliflower, thawed [sub broccoli for the cauli]
1/2 lb broccoli, thawed
1/2 jar Ragu light parmesan alfredo sauce.

Roughly chop thawed veggies and place in a pan with 1/2 cup water. Simmer until tender and drain. (Or can be steamed in microwave.) Add the ham in and warm through, then add the alfredo sauce and heat. Salt and pepper to taste.
May be topped with 1 cup shredded mild cheddar or 1/2 cup shredded smoked gouda. Allow cheese to melt on top before serving.

Makes 4 servings at 8g carbs each.

Scalloped Cauliflower and Green Beans

1 fresh head cauliflower [sub broccoli for this and the green beans, or use broccoli and cauli together and omit green beans]
about 30 - 40 fresh green beans
6 green onions- finely chopped
12 oz shredded cheddar cheese + or - to taste
1 1/4 cup whipping cream
salt and pepper to taste
4 T. butter
5 or 6 slices of cooked bacon (chopped)

[add chicken to this if you like]

Preheat oven to 350°F. Cut up cauliflower and grean beans and microwave in a tablespoon of water for 8 min to partially cook then season with salt and pepper. In a greased large casserole dish combine cauliflower, green beans, green onions, butter, bacon and cheddar cheese. Pour cream over top and place dish in oven. If dish is very full, put a cookie sheet under it to prevent bubble-over in oven. Bake 40 to 50 minutes till bubbly hot.

Notes:
Add chicken, hamburger, or other meat.
Add additional veggies of various kinds.

Nutrition info: About 36 carbs in the whole casserole based on a 2 1/2 qt. baking dish.

Makes 8 nice servings of over 1 cup each with approx. 4.5 carbs per serving.
