Default Boss coming to dinner

The boss is coming to dinner Thurs. night. I am planing on making Tequlia chicken with a salad and steamed asparagus. I would normally serve rice or potatoes as a side dish. Any good ideas on what to serve as a substitue? Thanks for any help.

There's always that cauliflower dish that's supposed to be mock mashed potatoes or mock rice.

How about a low-carb cheesecake for dessert?

Cauliflower!
There is a recipe that is a mashed potato substitute and there is also one where you grate the cauliflower and it mimics rice.

I know this is an old post, but can I have your tequlia chicken recipe? I don't have one and my wife is asking me to make it for her. Your post is the reason I am a member of this forum as I did a search for teq chix and up you came..lol
