Thumbs up Italian Skillet Chicken

This is an old favorite of mine that is low in carbs.

3 Tablespoons olive oil
1 garlic clove, finely chopped
1 1/2 lbs skinless boneless chicken, cut into 1" cubes
1/2 lb green beans, cut into 2" pieces
1 medium red pepper, cut into thin strips
1/4 cup chopped scallions
1 cup coarse chopped tomatoes
2" anchovy paste (or to taste)
1 Tablespoon capers (or to taste)
1-2 Tablespoons lemon juice

In large frying pan, heat oil over med-high heat. Add garlic cook 30 seconds. Add chicken and saute until opaque, 3 mins. Remove and set aside

Add green beans, cook 5 mins, add red pepper and scallions cook 2 mins. Add tomatoes, anchovy paste, capers and chicken. Sprinkle with lemon juice and cook 2 mins, until heated through.

Thanks I was afraid most people must have been turned off by the anchovy paste and capers since no one responded. It really is very hearty and good.

Help me out on the Anchovy paste. What is it and what does it taste like?

Sounds good but the anchovy paste??? How do you make that or do you buy it?? I'd like to try to make this.

anchovy paste is mashed anchovies that come in a little tube - like a tiny toothpaste tube. You can just squeeze some out instead of opening a can or jar of anchovies. I would think you could just mash up some anchovies to make an amount like a 2" squeeze of toothpaste.

Actually you can get cans of anchovies with capers if you can't find the paste. Both anchovy paste and canned anchovy with capers are in the tuna fish section of your grocery store.
