Default Xanthan Gum vs. Thicken Thin Not/Starch

Does anyone have an opinion about this? I know that thicken thin has xanthan gum in it, but it has other stuff too. ThickenThin is sooo expensive, and I found I can get pure Xanthan gum at less than half the price per ounce. can they be used interchangeably? Is one better than the other for certain types of recipes? Is the thicken thin worth the extra money?
Would love to hear what you think. Has anyone used both?

IMNSHO, Thicken/Thin is not worth the price. Xanthan gum is cheaper, but I find that both glide over the tongue in a really nasty way - and this is from someone who formerly ate and enjoyed tapioca and all manner of glutinous substances.

But you never know until you try it. I don't like it, but that's just me.

Question

With America Thanksgiving coming up, what are options for making gravy? I read your tip with pureed cauliflower, Karen, but I don't think my family will go for it.
