im in the mood for soup..i havent had it in ages and i miss it (im not talking cabbage soup, lol)
any low carb (induction level) creamy soups that are easy to make?
any recipies would be appreciated..x

There is a recipie in main dishes called cheesy broccoli bake or soemthing like that. The sauce you end up with tastes exactly like a cheesy broccoli cream soup. I highly recomend it.

You can also do quick chowders with heavy cream

I made Stilton soup a while back and it's delicious. I didn't blend the ingredients though, I left it "chunky".

Stilton Soup

Ingredients:

1 medium califlower, chopped into florettes
2 large leeks, peeled and chopped roughly
1 onion, peeled and chopped
Knob of butter
Chicken stock (enough to cover the veg in the pan.)
wedge of stilton
dash of double cream

-----------------------------------

Melt the butter in your stockpot, add the chopped veg. Put lid on and 'sweat' for a couple of minutes. Add enough chicken stock to cover the veg. Simmer until tender. Add the crumbled stilton and a dash of cream. Simmer until the cheese has melted. Blend until smooth and add a good grind of black pepper.

FYI -

The new campbells soup at hands are fairly low carb. Cream of mushroom is 4 carbs for the whole thing, but they do have added sugar.

Hi Joy - I've heard the Campbell's soups have a lot of sodium though - I'll check them out on the weekend - much handier than making my own.

I bought some of that Progresso Carb Monitor 'Chicken Cheese Enchilada' soup at the store today & had some for dinner. It is loaded with sodium....one reason I never ate much soup, but I really loved the taste. I had heard they were discontinuing it so I will buy all the cans on the shelf just in case.

It beats having to cook it from scratch since I'm the only low-carber in the house. It has 6 net carbs per cup & is pretty filling.
