Default Easy Mediterranean(ish) Chicken

*This recipe is suitable for Atkins Induction*

This is my simplified version of an already simple dish I saw demonstrated on TV here last week by a charming Aussie lady called Colette Mann. The original recipe was available in an Aussie "women's magazine," but as I don't buy such things, I don't have the original to hand.

Cut up whole chicken (Being budget conscious, I just used thighs. Even legs would work well)
Cherry tomatoes or whole tomato or two cut into biggish chunks.
Handful or so of olives
Goodly squeeze of lemon juice and/or zest from 1 or 2 lemons
Fresh thyme or other herbs of your choice
Handful of fresh parsley
Several cloves of garlic, peeled and sliced into still biggish chucks
Slug of olive oil
FGBP
As you can see, the measurements for this dish are very elastic. A lot will depend on how much you like things such as olives or garlic.

Preheat oven to moderately hot.

Place chicken in baking dish. Put all other ingredients into a dish and mix together before simply plonking on top of chicken. (I said it was easy. )
Bake for 40-45 minutes, or until chicken is cooked.
Place chicken pieces onto plate and cover with sauce from baking dish.
Enjoy! This was voted as "Please cook again as often as possible" by my DH.

The carb count will depend on exactly how much you use, but will not be too high.
