Default Truffles -- too good to be true!

Made these tonight for my birthday. Forgive me if there's already a recipe like this floating around out there.

So easy...

1/2 cup peanut butter (creamy or crunchy)
6 oz (1/2 bag) Russell Stover SF chocolate chips
1/2 cup heavy cream

coconut, crushed hazelnuts, cocoa powder, etc.

Melt the chips in a medium bowl in the microwave -- this took about 2 minutes for me and I stirred after about the 1st minute.

Mix p.butter into the melted chocolate.

Mix cream into the chocolate mixture.

Add any other stuff you want...I mixed in about 1/2 cup of SF coconut.

Pop it in the fridge for 30 minutes or more.

Scoop the mixture into balls (I did this by hand, but a melon baller would probably be a great help and not quite so messy) about the size of a teaspoon. Roll in the coating of your choice. (I used crushed hazelnuts for some and coconut for others). Eat and enjoy!

I don't have a count for this because it really depends on how many you roll up and what you coat them with. Mine were pretty large and I got about 22 out of the recipe. Gonna find out how they freeze because I sure don't want to eat all of them in the next day or two.

wow,, these sound great, where did you get russel Stover choco chips? Are they made with malitol or something else? The malitol tears me up. I did get some SF chips from minicarb that were malitol free, I guess I need to get some more and try this recipe. thanks for posting it.

I'm sure that 6 oz (or so) of any SF chocolate that you like would work as long as it will melt.

I got the Russell Stover chips at Super Wal*Mart. They've been carrying them for several months but they were marked WAY down and in a different section when I went the other day. That seems to be the death knell for LC products so I bought 5 bags of them! They do have maltitol but it doesn't seem to bother me. I love 'em and use them sometimes in a ricotta dessert I really enjoy. I'm sure that recipe is here somewhere, too. If not, I'll post it.

Just an update on the super walmart- ours told me they no longer have the sf products- which is why you may have found those choc chips so cheap! I was seriuosly bummed- they have a few atkins products but mostly breakfast bars and snack bars. So hurry out and buy all you can b4 it's all gone!!

You can replace the following for the melted chips and it contains no SA.

1 square baker's unsweetened baking chocolate
2 Tablespoons heavy cream
1/4 c. PolyD Plus

Melt chocolate square in small bowl in microwave for 45 seconds
add cream and polyD to chocolate and mix till smooth.

will yeild 4 oz.

300 calories
24 g. Fat
52 g. Carbs
44 g. fiber
8 g. net Carbs
4 g. protein

These sound like a wonderful treat to make my sweetie for Valentine's Day but I can't find the SF chips either. Has anyone tried Net Carb Truffle Cups? They say that they have 0.2 net carbs per piece and zero sugar carbs and are made with Splenda.

Hi Kevinpa,

Thanks much for the melted choc chips sub--this would work for most recipes, do you think? Also, If I only had Poly D, not the PolyD Plus, would I just add more Splenda?
In Canada, it seems WalMart has also dropped SF products--I'm beginning to feel I'm living in a third world country. Try and find ANYTHING sf up here, and it's enough to make you cry (and since I'm also hypoglycemic, I have!)

BTW, I miss your dog and cat pics, they were so adorable!

yes I have done it both ways polyd and polyd plus
if I use just polyd i add packets of splenda till it tastes right.

I forgot to ask; you don't get any bitterness with this recipe? Maybe the PolyD does something to counteract it, do you think?

I derived this recipe from looking at the ingredients on a bag of sf mini-carb chocolate chip....which they discontinued but as I understand are going to start making again under their new name.....
But to answer your question they tasted just like semi-sweet chocolate chips.not bitter.

That's really interesting. Yes, I've also heard about the upcoming release of the choc. chips. Thanks very much for the info., as I said, at this time, at least in my area, is either "make it yourself" or forget it!

I just made these and they were fantastic!!!

Was going to a dinner with a colleague and she was making dinner and so I brought dessert. She is not a low carber or sugar-free eater so I wasn't sure if she would like them but she loved them!! She kept a few for herself afterwards!

I made it the same, but rolled them in unsweetened coconut, cocoa powder, or jimmies (for her). If I hadn't had the choco chips on hand I would probably dice up 6oz of sugar free chocolate bars. The only change I would make next time is to give them a stir while it was cooling in the fridge. It didn't cool off evenly.
