Hi,
It's fine to eat canned foods, and unless you have a health problem where you really need to watch your sodium because of blood pressure, heart or something like that then the water weight shouldn't be a problem, it WILL come out especiallyi f you drink lots of plain water. It's depressing to see a pound or two of water gain show on the scale, but it happens to most people from time to time. I really don't think that the tuna or ham has much salt compared to a lot of other things, some of them not even canned. You should probably be more worried about the sodium in pork rinds or cheese (if you needed to be worried about it at all). It won't "jeopordize" your diet because any water weight is temporary and not a real gain at all.
