Please help convert recipes.
I need help in converting these two bread recipes:
Bread (A very dense bread.)
1 cup unbleached all-purpose flour
1 cup whole wheat flour
1 1/2 cups oats
1 1/2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
2 cups plain yogurt
1tsp sugar
1 cup raisins (optional)
Preheat oven to 350 degrees. Spray a 9x5 loaf pan with non-stick cooking spray.
Whisk together flours, oats, baking powder, baking soda, raisins and salt.
Beat yogurt, sugar until smooth.
Mix yogurt and flours by hand.
Scrape batter into the pan and let sit for 20 minutes.
Bake for 45-55 minutes or until lightly browned and the bread pulls away from the sides of the pan.
Turn out onto a wire rack and cool completely.

Soda Bread (2 loaves)
2c all-purpose flour
2c whole wheat flour
4c wheat bran
1tsp baking powder
1tsp baking soda
1/2tsp salt
1 egg, beaten
2c buttermilk
In bowl, combine flours, bran, baking powder, baking soda and salt.
Combine egg and buttermilk.
Add to the flour mixture, stirring with a fork, to make a soft, slightly sticky dough.
Turn out on a floured surface, knead gently 10 times.
Divide in half. Shape into two round loaves.
Place on greased baking sheet.
Bake at 375 for about 35 to 45 minutes, or until loaf sounds hollow when tapped on bottom.
How does one do conversions of "old" lifestyle recipes for breads? Any suggestions how to convert?
I used to be on a "wholesome" food kick before, I used to use lots of bran in my cooking. Any thoughts on bran usage on the Atkins diet?
Are there any guidelines on how to substitute flour etc to the Atkins diet?
