Thumbs up Coconut milk! A great non-dairy creamer.

Picked up a can of coconut milk for 69 cents. 1/4 cup is only 1.5g carbs. And you certainly wouldn't use that much to lighten your tea. Heavy cream is 1g per 15ml, which is a tablespoon. I like my tea a bit creamier, so I can be more liberal with the coconut milk. Ups your fat and tastes good too! Thought I'd share my discovery...

Unfortunately, coconut milk is loaded with saturated fat and I believe we are supposed to be working hard to load up on fats that are liquid at room temperature. If you open the can after it has been sitting on the shelf for a while, without shaking it first, you will notice a thick layer of coconut cream (fat) floating on top. I wish that I could find a VERY LOW carb creamer because I take coffee with my cream!

Correct me if I'm wrong but no study has proven that saturated fat ia bad for you on a low carb WOE.

I was thinking the same thing red. Saturated fats are a totally okay thing while doing atkins.

I use coconut oil to cook with. I buy the extra virgin kind from Tropical Traditions.... some say that coconut oil actually aids weight loss.

Theres nothing wrong with saturated oil, its hydrogenated oils we are to avoid like the plague... and beware because they are added to many of the "low-carb" packaged foods that have hit the grocery shelves recently.

But does the oil and milk taste nutty? Coco-nutty? I mean, I like coconut, but don't know if I want my fried chicken to taste like coconut...

You might be thinking of artifically solid vegetable fat as in margarine (hydrogenated oils). Those are poison. On the other hand, naturally saturated fats such as coconut oil, and animal fats like lard are not only okay but essential for good health.

I fry my eggs in coconut oil. It's slightly noticeable, but not objectionable. I think it would go well with chicken. Almost sounds like a Thai recipe. Try it and see.

Thanks for the info. I love coconut milk and Thai food! I hesitated making some my favorite Thai dishes because I thought it was a no no. Coconut chicken sounds delicious!

I think there are many studies that have been done to prove that saturated fats can clog arteries... just not as bad as transfats.

Does anybody know what coconut milk is like to drink? (say, as part of a milkshake), I currently use soya milk but might try coconut for something different

To drink? Depends how much you like your fat. I happily drink heavy cream (when no one is looking). I have also been known to indulge in coconut milk with a teaspoon right out of the can while cooking with it. So I think it is delicious, but it really is a matter of taste. It's very creamy and feels extremely sinful. Hmmm - I wonder how it would be with a spoon full of unsweetened cocoa powder....?

The studies showing the harmfulness of saturated fat were all done on a diet that was also high in carbohydrates. Check out this sticky in the Research/Media Watch forum.
