Default Spinach

Just bought an ENORMOUS bag of spinach (couldn't resist - it was a great deal and it looked sooo fresh). Am I right in thinking that this is one of the veggies I can have more often than others?

Last night, I sauteed it in butter and garlic , but I'm going to have to get pretty creative this week - I have tons to use up!

I love fresh spinach. It is one of the main staples in my meals. Lc, low calorie, good fiber, the perfect food. I have yet to hear of anyone having problems from eatting too much spinach

I love spinach too, and normally make it with garlic and butter ... it is sooooooooo good ... plus it is amazing how much it shrinks once it is cooked and strained!!!!

How about eggs and spinach? Make a spinach/feta/whatever else sounds good, quiche? Why not enjoy the foods you love together?......one of my faves.

Spinach is wonderful in salads or sauteed (prepared this way, I could eat a whole bag myself).

It's really good for you and very, very low carb.

DH (who does all the cooking -- lucky me!!) likes to fry up some bacon, then he sautees the spinach in the hot bacon grease and crumbles the bacon into the whole thing. It is to DIE for. Man, my mouth is watering.
