My favorite dressing is a modified Caesar Dressing:
(For real Caesar, you add Romano cheese, but it's good without it, too.)
1 egg yolk
1 clove garlic, raw
1 anchovy fillet
.5 teaspoon mustard
.5 - 1 cup olive oil
juice of half a lemon
If you have a stick blender (they are SO USEFULL!):
put everything except the lemon juice in a container (I use
a plastic 12oz cup) blend till thick, add lemon juice to taste.
If you don't have a stick blender:
(Just like making Mayo, ) Put the first 4 ingredients in a mixing bowl,
(oh, you have to mince/crush the garlic clove) mix a little to combine,
slowly mix/whisk the oil in till its thick, add lemon juice to taste.
Of course, you can juggle the ingredients to suit your
own taste. This dressing has the advantage of eating
raw eggs and garlic, which is very paleo. Just don't
breath on anyone after you eat it.
