Talking HELP - I need a really good lc recipie for my family to try!

I don't know if this is the right place to post this, BUT - my mohter and sister were up yesterday for a visit to the hospital (my aunt is sick)- they were totally blown away with how much weight I have lost, and they are coming again next weekend with the kids (9 + 12). Problem? My sister really wants to try a low carb meal, she is considering putting her family on low carb (she is a bit of a gourmet cook). Anyway - she also works for the health centre,and was saying the nurses and nutritionists are VERY complimentary about the Atkins/low carb lifestyle!!

So if you can recommend a really good "family" type recipie, I would appreicate it - I checked out the kitchen, but thought I would see if there were any "tried and true" recipies that kids like as well.

Hi Teresa,

Some suggestions:

Caesar salad
Chicken wings - if they like them hot, the Timid Jerk ones at the Loblaws chains are very good, LC and easy to prepare
Stir-fry veggies with Renees Cucumber Dill Dressing is one of my favs -- don't know how the kids are with veggies
Filet of salmon poached with olive oil and dill, bit of lemon added at the end - again, my kids love this but not all do
Hamburgers with lettuce leaf "buns"
Don't forget the LC cheesecake for dessert
Or try making SF jello, then whip cream. When the jello is set, whip them all together -- makes a kind of foamy dessert

For summer time use your regular potato salad recipe, but use cauliflower instead of potatoes, and if you add sugar, add Splenda.

Mine is killer. I add grated cheddar cheese and bacon bits.

Doesn't taste like potato salad--but it is really a treat, and I get asked for my recipe every time I serve it.

Don't forget deviled eggs, as appetisers, and you can grab one when you're hungry. . .it's a plan.

Teresamay, this is one of the BEST websites for low-carb food. This woman loves to cook and tries out tons of recipes all the time. Everyone seems to rave about most of the results too.

You might want to check it out and see if there is anything that strikes your fancy.

I really like the "Awesome" broccoli and cheese casserole that is in the recipe section of this website. I have also been making teriyaki chicken lately using the Carb Options Teriyaki marinade and simply broiling or grilling the chicken. It's very quick, easy and tastes great. We have it with a salad or some steamed green beans. Yum!

Teresamay,

One of the best low carb recipes that you can do for kids is in the Atkins book - it's called "Fromage Burgers". My son loves these - it's basically a cheese stuffed hamburger patty with some extras in the ground beef before you cook it, and we serve it with a salad. Another hugely popular low carb meal is tacos using romaine or bib leaf lettuce as the shells.

For dessert - you have to try the Cheesecake recipe that is posted on the new website for the Hershey's 1Gram Chocolate bars!!!!! Here is the website - click on "recipes":

We made this Saturday night and it was AWESOME - 8 grams per slice of cheesecake. It's called Chocolate Bits Cheesecake. I know this would impress a gourmet cook.......

Hi there, just wanted to put in a plug for my favorite low carb cookbook, 500 low carb recipes by Dana Carpender. I believe she also has a web site, holdthetoast.com
I made her Asian Chicken Salad and also some of her Pnut Chicken Wings from the 500 cookbook and took to a potluck - everybody was crazy about them...

Default pasta substitute

I've made a lasagne substitute using cabbage & eggplant instead of noodles that is incredible. Also vegetables with pasta meat sauce and a layer of provolone cheese put under a broiler to melt cheese - yummers.
