Default Luncheons - How do you stay on low Carb with mexican food?

Every once in awhile when someone leaves our company, we have a luncheon for them. The type of food is almost always mexican. Tomorrow is one of those days and the type of food is mexican. I hate it when it comes around, because it happens everytime I want to do the low carb diet. During these times I end up blowing the diet. This luncheon is particularily special because it's one of my friends. The place of choice was not up to the majority. What do I do?

Any advice?

Default Fajita Pile

I have the fajita plate when we eat Mexican. Just pile the meat and trimmings - usually a few onions and bell peppers together with a little salsa and sour cream, guacamole if you want it and eat it as is. Skip the tortillas, beans and rice. Some of the restaurants will trade those out for a small salad. Definitely not carb free meal, but lower than many of the alternatives. Good Luck!
