I would pack a small cooler bag with string cheese (or babybel cheese rounds), pepperoni slices, veggie slices with a small container/packet of blue cheese dressing, bottled water, individual portion sized of macadamia nuts or almonds, possibly a LC bar, and SF gum.

Hi

I used to go with my husband on the road and always took pepperoni and cheese cubes, celery with cream cheese or peanut butter, "cheese crackers" (stack two pieces of deli american cheese and cut the stack in four squares. Place squares on glass dish and microwave til well browned).
Now there are great bars to take. The Genisoy Low Carb Crunch chocolate chip bars taste JUST like chewy granola bars. A little container of olives would go great with the cheese. Cold wings are good too if you have a little cooler to take. Tortilla roll ups are always great. Find some good lc tortillas and spread them with a cream cheese/salsa mixture, roll up and slice.
Just some thoughts, i'm sure others will have some great ideas too.
