Default Favorite vegetable side dish

What is your favorite vegetable side dish? I've done some searching and found some good ideas but wondered what some absolute favorites of yours are, 5 star lc dishes. thanks!

I have quite a few

spaghetti squash with garlic butter and maybe some parmasan
Roasted squash with maple flavor
pork fried cauliflower rice (this is more a meal around here though)
Tofu Mac and cheese? (I don't know if this can be counted as a veggie)
Baby brussle sprouts in butter, or fresh asperagus
Zucchini hashbrowns
zucchini tossed with herbs and olive oil, then grilled (it gets really juicy and tender)
Bacon fried cabbage
coleslaw
small side salad with cesear


The cauliflowered mashed potatoes are good. THey just aren't good enough to be worth the trouble. One of my favorite dishes is the jicama mock applesauce. It is more of a snack or dessert though instead of a side dish.

This is a good thread!

- Spinach and artichoke bake - baked with cheese and cream so good!
- Sweet spaghetti squash dish ( like pudding almost!)
- Green bean salad with blue cheese, pecans, and red onion
- Spanish 'rice' using shredded cauliflower
- Green beans sauteed with butter, garlic, and topped with parmesan
- Waldorf salad using jicama instead of apple
- Broccoli and avacado salad with walnuts

If you want any recipes let me know and I'll provide a link!

Hi there a Thin me!

I tried to message you the recipe but I guess it was too long so here it is! I hope you enjoy it! We are having it with dinner tonight in fact.

Spinach and Artichoke Casserole

2 - 10oz packages frozen chopped spinach, thawed and squeezed dry
1 can artichoke hearts
1/2 C. heavy cream
salt and pepper to taste
2/3 C. parmesan cheese
1 package (8 ounces) cream cheese
1 C. half and half

1. Preheat oven to 350 degrees. In a bowl, combine spinach, artichokes, cream, salt, pepper, and 1/3 C. parmesan

2. In a small bowl with a mixer at medium speed, beat cream cheese until fluffy, scraping occassionally. Reduce speed to low and gradually add half and half, mixing until well blended.

3. Spoon spinach mixture into 8x8" casserole (greased). Pour cream cheese mixture over the top evenly. Sprinkle with remaining 1/3 C. parmesan. Bake 25-30 minutes until edges bubble and top is golden.
