Thumbs up Elegant Chicken: Easy & Delicious

I've made it twice, and everybody just loves it. These also make great leftovers; just warm them up in the mic!

Elegant Chicken

6 skinless, boneless chicken breasts, pounded to 1/4 inch thickness
3 oz pepper jack cheese
3 oz softened cream cheese
salt and pepper
bacon slices

Combine cheeses. Divide mixture into 6 portions and form each portion into a log shape. Salt and pepper chicken breast. Place a cheese log on the middle of each chicken breast. Fold chicken around the cheese. Secure with toothpicks. Wrap two to three pieces of bacon around each breast bundle.
Place chicken in a greased 9 x 13 pan or a roasting pan. Bake uncovered ~ 350 degrees for 30 to 40 minutes or until chicken is no longer pink. Turn oven to broil and broil 3 to 5 minutes or until bacon is browned.

Sauce

Combine 1/3 cup Ranch dressing with 1/3 cup picante sauce.

Serve chicken with sauce.

Sorry, I didn't figure out the carb count on these delicious bundles! Make sure to look for low-carb picante sauce!
