Default keeping it clean a real newbie snack ?

ive been atkin-ing for about three weeks coming up (seems like forever really)

so I’m starting to get a itch for new foods, obviously lc of course, and I’d really like to stick to the 20 or less carbs for the day

I’ve been going through the recipes like crazy and I’ve seen some really good ones that I’d love to try.
but my overwhelming question is, where is this nitrate free meat.

a lot of the quick snacks call for lunch meat, but all of the lunch meat that I’ve seen is nitrate packed. which = fear of not keeping it clean.

bacon
lunch meats
pepperoni

where is this nitrate free meat?

then second, would it be safe to assume that if I go to the deli section of my grocery that the meat that they slice would be nitrate free?

then second, cheese. doesn’t induction call for ummm about an ounce of cheese.
and again a lot of the quick snacks scream for cheese, but yeah, I don’t think its safe to eat that much cheese at all, esp. on induction,.

does anyone have good ideas for induction snacks, currently I’m eating small cans of tuna na na cant last to much longer on that

Yes, you should be able to get nitrate-free meat at a good deli counter. I don't know how widely available it is, but look for the Applegate brand or just ask the person who runs the deli.

You're allowed 3-4 ounces of cheese per day on Induction.

If you're 3 weeks into Induction you might try adding some nuts in small quantities. I found that almonds and macadamia nuts satisfied the urge for something crunchy. But you have to be careful about overdoing it with nuts.

pork rinds and cream cheese (like NickFender said you can have 3-4 oz cheese)
deviled eggs
veggies dipped in dressing or dip
olives (10-20 a day)

Without the bacon and lunchmeats snacks are a hard one. I can't afford to buy nitrate free meats and have used regular the whole time. It has not seemed to slow me down. I know you're wanting to do this cleanly and I respect that. But if you're worried about staying away from nitrates because you don't want to stall I don't think you have to worry. I'm not convinced that Atkins said to stay away from nitrates because it would stall...I'm more inclined to believe he put that in there because he knew from research that nitrates are so unhealthy. I've chosen to eat them for now because it's just easier...as I add in carbs and am able to add more to my woe I will slowly cut back on nitrate containing foods. I have started cooking meats for lunch - or eating leftovers so I don't have to eat lunchmeats...but I like bacon and sausage so eat it fairly regularly. I also don't seem to snack much any more...which does help.

I'm sure many people will post here with other good ideas.

while some nuts are low carb they have high cal. counts.
ya might stall i did. every-bodies diff.

this fourm makes things soooo much better.

tonight after work i will stop over to the market for porkrinds and cream cheese.

i'm still worry about the bacon, but i'll give it a try.

Hi Kittysf.... I am in my 9th week on Atkins and have lost OK... whilst eating a fair amount of nitrate filled stuff... no problem at all. One of my favorite snacks is what we call here "bier sticks" or "cabanossy sticks, a smallish thin sort of salami/peperoni, only 0.2 carb grams a stick, and I can only usually mange 1/2 at a time ( really good for keeping the fat intake up too ), add a lump of cheese too, very satisfying. Another great snak/lunch/whatever is rotisserie chicken. They sell them (already hot & cooked) at our supermarket... Just chow down on a leg or whichever bit you like best... they are great and last a few days in the fridge, very convenient. (A LOT of chickens have died in my quest to get slimmer!!!)

P.S. watch the nuts, I had to stop with the macadamias....I THINK they made me slow down, so rather than take the risk I thought I would leave them till later.

i work at an office, so i'm desk bound most of the day. so a salad as a quick snack?

i've purchased a bag of porkrinds for the desk. but other than what are some other ideas?

sorry -- I missed the snack thing. What about celery with a nice thick dressing to dip it in? Or pieces of hard boiled egg, dipped in salad dressing or mayo. Chunks of grilled chicken.

ham and creamcheese rollups
bell pepper rings(quieter then celery
celery w creamcheese/chives maybe peanutbutter
hard boiled egg(not a favorite of mine)
Dannon carb-control yogurt(good outweighs not on list-late induction)
sunflower seeds

Default i'm going to follow freckles

and try the porkrinds with cream cheese.

i have to break my nitrate fear and purchase some bacon and prepared lunch meats, after i do that i'll be better about snacks.

If you're into your third week I'd say it's time to give up induction and go into OWL. You need to discover your CCLL or you'll never make this a way of eating for life.

You can increase the cheese to about 4oz. Also as you climb the carb ladder you'll be able to add in nuts and berries.
