Karen,

My husband & I are "low-carb lifers" and we both love acorn squash. We live in Michigan so it is fairly easy to get but the carb count is so high that we would like to try other types. The only problem is we don't have the faintest idea of what to get or how to prepare them. Help!!!

lists butternut squash soup.

I'm sure there are other options available, and many other visitors here have much greater imaginations than I.

Hi Maren,

The usual LC squash is spaghetti squash. But, you can also mash up a higher carb squash with cauliflower to lower the count.

To find out what the carb count is of various squash, go to low carb tools at the top of the page and type in "squash". Delicata, AKA sweet potato squash is another alternative that is fairly low in carbs.
