Default Chocolate dipped strawberries?

Has anyone used the low carb dark choc bars such as Dr's Carbrite for cooking? I was thinking of making chocolate dipped strawberries for dessert on Christmas day. I wonder if they melt the same as regular chocolate. Anyone used them? Thanks for your help.

Well even though noone replied I tried the choc dipped strawberries with the Dr's carbrite dark choc. They were fabulous! A big hit and you really couldn't tell the difference from regular chocolate.

I think you just have to be careful when melting that stuff that it doesn't burn. I've melted it before for a cheesecake and just used a double-boiler. I'm sure your strawberries were a hit!

I make choc covered strawberries by melting one square unsweetened baker's chocolate in the microwave, adding a packet (or more to taste) of Splenda and a couple TBSPS whipping cream. This is more like a fondue than a hard covered strawberry, but it is a delicious treat!
