Default Ricotta Cheese

Can you have ricotta cheese on induction? I've found several recipes calling for it - I'd like to try some of them. But don't know if I need to wait.

Nope

It is a fresh cheese along with cottage cheese that is for OWL. Used in small amounts in recipes should be fine after you finish the first two weeks induction, but I would hold off until then.

Thanks! Have either of you tried mock cream of wheat? That's the main recipe that I'd like to make with ricotta. I'll wait until after induction. Have a great weekend!

I haven't seen that recipe. I always loved cream of wheat though and I do miss it.

I havn't seen one that takes ricotta. I have a recipe that's ok for induciton.

Jicama – Mock Apple and Cinnamon Oatmeal

2 cups ½ inch cubes of Jicama
4 tablespoons butter
1 tablespoon cinnamon
¼ cup or 6 packets of Splenda
½ cup heavy cream

Boil the jicama in enough water to cover. When the water cooks out add enough to cover again and boil that down. Then add more water butter cinnamon and Splenda and cook down until it is half of the liquid left and then add your cream. Cook until almost dry.

Then take warm Jicama and put in food processor with lower chopping blade. Chop until as smooth as possible.

This makes 4 servings and tastes just like warm oatmeal with cinnamon and apple flavoring.

I made it without the cream and using stevia instead of splenda. I also added a small amount of apple cider vinigar for more of an apple taste.

It came out amazing, thoguh not like oatmeal. It was ike an applesauce with just a tiny crunch like real apples. It made a great treat. You might try it one day. Cook it the night before though as long as it has to boil, then enjoy cold or reheat the next day.

This has always puzzled me. In my Atkins books it says no fresh cheeses on Induction but in the very same book it lists ricotta cheese omelette as an Induction recipe. Odd huh?

I emailed the Center but never got a reply. It's just a touch confusing. I gave in and ate it anyway and was fine.

The same thing with the Zucchini bread. No breads on enduction then in the menu they have Zucchini bread. I ate it too! I had no problems with it. I still lost weight.
