Default Help -- Need Whole Milk Powder

Does anyone know where to purchase this, or what a good substitute would be? It is in a few recipes in Dana Carpender's 500 Low-Carb Recipes Cookbook -- one of those recipes I will be making for Thanksgiving. I've been to four different health food stores. One had Low-fat milk powder, but this had 13 carbs per 2 tbsp. serving. I decided to pick up Keto milk powder, which is made from soy and is low carb.

Any suggestions would be sooooo apppreciated!

Have you checked your supermarket? Here whole or skim milk powder (aka "powdered milk") is available in all supermarkets.

Actually, I thought this product was only available in health food stores (Dana mentions that in the book). I think whole milk powder has more fat in it, and probably less carbs than a low fat type of powdered milk. I want to be sure that the recipe comes out okay (especially since I'm using our guests as guinea pigs. )

Availability varies...In Broward, where my parents are, I can get the Whole Milk Powder in some Winn-Dixies. Up here in P'Cola, I can't even get Brown Sugar Substitute...much less Whole Milk Powder. All they have on the shelves up here is Nonfat Dry Milk Powder. What I'd really like to find though is Dry Cream Powder [made from REAL cream, not some fake shit.] I know it exists because I've seen it listed on some LC food labels. But, I have yet to find it in a store.

13g per 2 Tbsp ??? Nonfat Dry Milk Powder [the Nestle Carnation Instant Nonfat Dry Milk] that I sometimes use has 12g per 1/3 cup. 1/3 cup Dry Milk + 2/3 to 1 cup Water = Skim Milk. What I do [when possible] is replace each 2/3 cup of Water + 1/3 cup of Milk Powder with 1 cup Whole Milk. If the amount of Dry Milk called for is more than the amount of Water I can remove from the recipe, I use the Nonfat Dry Milk for the remainder.

For example, if a recipe calls for 2 cups of water and 1 cup of Dry Milk, I would use 3 cups of Whole Milk. If a recipe called for 1 cup of water and 1 cup of Dry Milk, I would use 1/3 cup of Water + 1 cup Whole Milk + 2/3 cup Dry Milk Powder.

This is soooo frustrating! I've called every health food store in our area, as well as supermarkets (Winn-Dixie, Food Lion, Harris Teeter). The only powder milk product they have is the low-fat kind.

I searched the Internet and found that Nestle makes this... all their low-fat powder milk lines every supermarket shelf. Nice to know it's carried around the world... except here.

I've even sent Dana Carpender an e-mail asking for a substitute I can use for this recipe, but probably won't get a reply in time (or at all). I really had my heart set on making that fudge toffee.... Can ya tell I'm desperate?

Thanks for the replies cc and Rosebud. I'll continue my search until next week -- I may just have to use low-fat and increase the powder amount. I hope this doesn't ruin the recipe (of course, I have nothing to compare with since I've never made it, lol). Wish me luck.

I found some online. It's sold as a soapmaking additive, but it's food-grade.

I couldn't find it near me, either.

I actually found this in a little health food store in our backwater area of Canada, in with the other products bulk-packaged by a local health/food distributor for the health food store specifically.

I've had luck in the past asking at the customer service if they can order certain products (like food grade cocoa butter) in for me even if it wasn't on the shelf. And they did! Have you tried that?

I have bought Now Natural Foods brand powdered whole milk at local health food stores. It's "non-instant", but you just have to stir it a little more. Carb count is 11 g per 1/4 cup dry, which makes 8 oz. milk.

Their website is http://www.nowfoods.com - they don't sell it online, but they offer a store finder based on zip codes for their products.
