From what I understand--Eggbeaters are just the whites of egg with some food coloring added- so I do not see why you can't use them. Why not just use egg whites and throw away the yolks.. It is cheaper that way I think> Alice

I was just looking at the time factor. It is much easier to pour an egg out of a container than it is to crack it, beat it and so on....

I read the carton tonight, seems like they have added a bunch of things to it. A small carton has like 7 carbs...

THink I will just slow down and break a few eggs...

Max, could you break the eggs the night before? I know eggs will store quite well for a few days in a bowl out of their shell. An egg in a non-cracked shell has a shelf-life of around 30 days or longer, but one out of the shell (or in a cracked shell) has a shelf life of about 5 days. Anyhow, just crack them into a bowl the night before, mix them up, add some seasonings and put it in the fridge. Take it out in the morning, give it a stir and cook it! Or if you prefer them fried, don't stir!

We also boil about a dozen-and-a-half eggs every few days (I'm sure for one you wouldn't need to do that many, though). We keep them in the fridge, and if we want boiled eggs for breakfast, just peel the egg and microwave it for a few seconds (not too long though because they do like to explode). Once they're hot, I mash mine with a fork and stir in butter, salt and pepper.

Funny you should mention boiled eggs. I have about 3 dozen eggs in the fridge right now. I normally hard boil a dozen at a time.

My normaly breakfast has been two hardboiled eggs and a stick of cheese. Which is actually all I really need.

Come lunch it is HARD to even be hungry!

Don't forget, too, that whole eggs give you much more in the way of nutrients and protein than substitutes.
